Antonio is the founder of True Delicious, an artisanal bakery based in Petaluma and specialized in Italian desserts.
He inherited the passion and the tecnique for Italian pastry from his father, Palmiro Russo, an award winning pastry chef with more than 50 years of experience and member of the Italian Federation of Pastry ranking with "Excellence".
Antonio, why you decided to leave your hometown in Campania for America?
I had previously lived in the US. I moved to New York when I was 19 because I wanted to learn more about advertising and design and took some classes at FIT New York during 2000-01. I returned in Italy in 2002 and 7 year later, in Napoli, I met my wife while she was traveling from north to south of Italy. She is from San Francisco and she was telling me about how beautiful California is. I had never been on the West Coast and in 2011 we traveled to San Francisco for a summer vacation and to visit my in laws. I thought California was gorgeous and fell immediately in love with it. In 2012 my wife and I move to the USA. I had several reason why I wanted to move in California but the two most important are: Being close to my wife’s parents and start a business to chase my American dream.
What is the secret of your biscotti?
More than 50 years of experience as a pastry chef. I know I am only 39 but my Biscotti recipes are older than me and have been tested and perfected for many years. They are my dad’s recipes. He is an award winner pastry chef in Italy. He is part of the Federation of Pastry Chefs and teaches classes to professionals in Europe and USA. I am lucky to be able to use my dad’s expertise and recipes. He taught me how to make many desserts and also inspired me with his passion and creativity. He is always available and he is very involved in the future of the company working on new recipes. I am very grateful for that. For me it’s like True Delicious has the best research and development in Italy. :-) My dad has always taught me that great ingredients make great dessert. True Delicious biscotti are made with high quality locally sourced ingredients. We use no preservatives, no artificial colors or flavors and will keep them 100% natural for ever.
What’s your best seller dessert?
True Delicious Almond Biscotti is our best seller flavor. Although they are originally from Tuscany, this recipe has become a true representation of Italian desserts. This is the flavor that most of the people in the USA are already familiar with. The Almond biscotti is a classic and can be a eaten by itself, dunk in coffee tea or milk, paired with wine or in many other ways. Our biscotti are different because there texture is crisp and crunchy but at the same time is airy, not too hard, chewy and are easy to break. I keep receiving compliments by many people about the texture and flavor including some from people that are usually not fans of biscotti.
